Christmas Cookies Part Two

Yesterday my sister and I made our second round of Christmas goodies and this time we were successful.  We made two batches of my Grandmother's Swedish Christmas cookies and made them in about two hours.  Last week when we made the same amount it took us about 4 hours.  Why the difference?  The materials we were using!  Last week we were rolling the dough on parchment paper with a roller that was too smooth.  This week we had a  pastry mat and a pastry sleeve on the roller.  It made all the difference in the world.  We also made peanut brittle, peanut butter bars ( like the payday candy bar) caramels, peanut butter cups, and peanut butter fudge.  If you did not know it, my sister loves peanut butter!  So all in all, it was a successful day.  I cannot believe that tomorrow is Christmas Eve.  I still have a couple of items to complete of my  two homemade gifts so I better get busy!   Have a good Sunday!
